Starches require prolonged enzymatic action in order to be broken down into simple sugars (glucose) for digestion. It does, however, provide the bulk necessary for intestinal action and aids elimination.

All sugars and starches are converted by the body to a simple sugar such as “glucose” or “fructose”. A small portion of the glucose is converted to glycogen and stored by the liver and muscles. The excess is converted to fat and stored throughout the body as a reserve source of dieting food energy.
